From Florence and Benoit Chazallon of Château de la Selve, the Cros des Calades wines are made from some of their neighbours' grapes. All organic of course, and the vinification is along the same lines as at Ch. de la Selve - minimal intervention and respectful of year and terroir. 70% Sauvignon Blanc and 30% Viognier, with 20 days on the skins, this is a bone dry, complex, spicy and aromatic orange wine. Makes a great match for strongly flavoured dishes or food which packs a big umami punch!
