Poivre d'Ane Chair à Canon 2021

From a vineyard planted in the 1950s, this is ( unusually ) 100% Aubun. Aubun is a thin-skinned variety which produces pale coloured, fruity reds with light structure - as such in the 1950s growers were encouraged to scrub it up and plant with "better" varieties. Luckily there is some left! Low in alcohol and grown in an excellent cool microclimate, this is super digestible and fresh. Fermentation was short, with whole bunches, followed by a period in stainless steel. No SO2 was added. Think red berries and southern French herbs with a lick of refreshing acidity.
