Poivre d'Ane Veloso 2021

Complex, mixing together techniques from orange wine production and the more common direct press. The Roussanne, 30% of the blend, is macerated on the skins for 3 weeks while the rest of the grapes are directly pressed and put into stainless steel tanks. No SO2 added until bottling, and then only a trifling amount. The wine has an incredible freshness for something from this part of Provence, and a delicate backbone of fine tannins from the skin macerated Roussanne. Something to sip and contemplate.
